Meet the Chefs ... Russel & Karolyn Stokes
Chef Russel Stokes was raised in a family where great food was always treasured. Born in Portland, Oregon, his mother’s professional baking and his Italian grandmother’s family feasts inspired Stokes to dedicate his life to cooking. Russell’s mother had a second passion, surfing, which lead her to move her family to Kauai when Russell was eight years old. Russell grew up learning to love food, and at the age of 19 he joined Roy’s Poipu Bar and Grill, eventually working his way up to the Executive Chef position.
Chef Karolyn Stokes was also born in Portland, Oregon and was raised in a nearby town until she went to college. She went to Pepperdine University and studied early childhood education, minoring in English and German. After working in different fields for a couple of years, she attended culinary school. Karolyn spent the next year attending the California School of Culinary Arts, spending eight hours each day learning about all aspects of the culinary world. The California School of Culinary Arts is a daughter school of Le Cordon Bleu in Paris, France, basing its doctrine on classic French cooking techniques through intense hands-on teaching. Afterwards, she did her externship at Roy’s Poipu Bar and Grill, where she met Chef Russel Stokes :).

Favorite local eatery near the Lihue Fire Station. Dani's is a good place to try luau food for good prices. You can order Hawaiian-style laulau (pork wrapped in ti leaves and steamed) or kalua pig and rice. Other island-style dishes include Japanese-prepared tonkatsu (pork cutlet) and teriyaki beef, and you can get the traditional steak too. No credit cards. They close on Sundays and don't serve dinner. Reasonable prices, no frills.

I met Christina recently while attending the fabulous 'Oasis Lounge' Play a few weeks ago and devoured a delicious French Kauai Crepe during the intermission. Amazing crepes!! They are currently selling them at the Hanalei Farmers Market between the hours of 8:30 and 11:30 on Sundays. And also at the private Waipa Market, just past Hanalei, from the hours of 2:00 to 5:00 on Tuesdays. Occationally, if you are lucky, you will find them at the Anahola Taro Patch concerts. They are also avaliable for catering, private dinner parties or picnics in the park. Please tell Christina Castelanelli that Lilikoi sends her Aloha!

What's A Puka Dog?
