Chef Roy Yamaguchi wanted to start a
new concept based off his grandfather's tavern in Maui that he remembers
growing up. The Tavern hosts a casual atmosphere with excellent service
and attention to detail. They feature American Classics & Local Favorites
with a little French twist. Their signature dish is Roy's buttermilk fried
chicken with mashed potatoes and sauteed kale. They are fortunate to have
their own 5,000 square foot garden; where they grow herbs and vegetables
that appear on their menu as well!

I just didn't feel up to cooking
tonight (02/18/11)and I have had so many visitor's and Kamaaina rave about
JJ's pizza, which reopened after Casa Bianca closed last year. We were
not disappointed ... the artichoke & spinach pizza lived up to all
positive reviews! Their family has been making these thin crusted pizzas
for over 50 years! So here's another great family business you can support
and enjoy on Kauai. Lilikoi (A Big Mahalo to Jason & Jennifer, the
pizza pie was divine!)

Meet the Chefs ... Russel &
Karolyn Stokes
Chef Russel Stokes was
raised in a family where great food was always treasured. Born in Portland,
Oregon, his mother’s professional baking and his Italian grandmother’s
family feasts inspired Stokes to dedicate his life to cooking. Russell’s
mother had a second passion, surfing, which lead her to move her family
to Kauai when Russell was eight years old. Russell grew up learning to
love food, and at the age of 19 he joined Roy’s Poipu Bar and Grill, eventually
working his way up to the Executive Chef position.
Chef Karolyn Stokes was
also born in Portland, Oregon and was raised in a nearby town until she
went to college. She went to Pepperdine University and studied early childhood
education, minoring in English and German. After working in different fields
for a couple of years, she attended culinary school. Karolyn spent the
next year attending the California School of Culinary Arts, spending eight
hours each day learning about all aspects of the culinary world. The California
School of Culinary Arts is a daughter school of Le Cordon Bleu in Paris,
France, basing its doctrine on classic French cooking techniques through
intense hands-on teaching. Afterwards, she did her externship at Roy’s
Poipu Bar and Grill, where she met Chef Russel Stokes :).
