Josselin received recognition from prestigious culinary institution for his innovative culinary style and use of fresh, organic ingredients. The James Beard Foundation nominated him for “Best Chef of the Northwest”. Bon Apetit magazines singled out his former restaurant “A Pacific Cafe” as one of the best restaurants in the country”; and Conde Naste Traveler chose “A Pacific Cafe” as one of it’s “50 Choice Restaurants Around the Country. Chef Russel Stokes was raised in a family where great food was always treasured. Born in Portland, Oregon, his mother’s professional baking and his Italian grandmother’s family feasts inspired Stokes to dedicate his life to cooking. Russell’s mother had a second passion, surfing, which lead her to move her family to Kauai when Russell was eight years old. Russell grew up learning to love food, and at the age of 19 he joined Roy’s Poipu Bar and Grill, eventually working his way up to the Executive Chef position. Chef Karolyn Stokes was also born in Portland, Oregon and was raised in a nearby town until she went to college. She went to Pepperdine University and studied early childhood education, minoring in English and German. After working in different fields for a couple of years, she attended culinary school. Karolyn spent the next year attending the California School of Culinary Arts, spending eight hours each day learning about all aspects of the culinary world. The California School of Culinary Arts is a daughter school of Le Cordon Bleu in Paris, France, basing its doctrine on classic French cooking techniques through intense hands-on teaching. In 1968 this plantation manager's home was originally opened as the Plantation Gardens Restaurant with a relaxed and elegant atmosphere. The owners now wish to return to that name to share the home's history and that warm aloha spirit with its guests. The historic plantation manor house dates back to the 1930's. Formerly known as the Moir residence, it is a historic plantation home richly refurbished with Brazilian cherry wood floors, koa trim, rattan seating and a large, open air veranda. The surrounding Moir Garden features cacti, succulents, the largest private collection of aloe in the Kiahuna Resort and numerous koi ponds.
